A Delicious Roasted Root

Have you ever roasted radishes? If you haven’t, you should!! I don’t love the sharp bite of raw radishes, but I do love their health benefits and physical beauty. It turns out that roasting rounds out the spicy radish flavor and mellows the overall experience. This makes for a much sweeter vegetable that is delicious atop fresh, crisp greens dressed with your favorite oil and vinegar.

Or serve them for breakfast with fresh sausage, fermented vegetables and avocado slices.

For an especially beautiful plate, choose watermelon radishes whose pale green exterior hides a bright pink sunburst of flesh.

Shred the radishes in a food processor before roasting them in a 375 degree oven for 20-30 minutes.

N.B. Radishes give off a pungent aroma while roasting in the oven. You may want to avoid making this dish right before you are expecting company,
